Onion and tomato relish

A super-quick tomato relish to serve with your curries. There's a nod to the tomato and onion salads you get in curry houses, but this one is bursting with fresh flavours.

Ingredients

  • 1 red onion, thinly sliced
  • 2 ripe tomatoes, chopped
  • small bunch fresh coriander, chopped
  • 1 tbsp lemon or lime juice
  • pinch caster sugar
  • sea salt flakes and freshly ground black pepper

Directions

  1. Stir all the ingredients together in a bowl and season with salt and pepper.
  2. Leave for 10 minutes or so for the flavours to develop. Serve.
